<p><strong>PANETTONE (Italian Bread)</strong></p>
<p>Ingredients<br />
- 1 1/2 cakes of fresh baker&#8217;s yeast<br />
- 65 ml (1/4 cup) sugar<br />
- 6 tbsp. warm water<br />
- 6 egg yolks<br />
- Finely grated zest of 1 lemon<br />
- A pinch of salt<br />
- 500-750 ml (2-3 cups) flour<br />
- 100 ml (6 tbsp.) diced candied peel<br />
- 100 g (6 tbsp.) + 2 tbsp.butter<br />
- 4 tbsp. sultanas<br />
- 4 tbsp. currants<br />
- 1 tsp. vanilla</p>
<p>Method<br />
Sprinkle 1 tbsp. granulated sugar and the yeast over the warm milk and let sit 3 minutes; mix and let rest in a warm draft-free place (e.g., a warm oven that has been turned off) until the mixture has doubled in volume, approximately 5 minutes;<br />
pour the mixture into a bowl, add in the egg yolks, vanilla, lemon zest, salt and remaining sugar;<br />
gradually mix in 500 ml (2 c.) of the flour by hand until a smooth consistency is attained &#8211; the dough should easily come together into a ball;<br />
gradually add the butter cut into small dice and beat until the dough becomes smoother and more elastic;<br />
add 125 to 250 ml (1/2 to 1 c.) more flour until the dough is firm and silky but not sticky;<br />
place the ball onto a lightly floured surface. Knead the dough for approximately 10 minutes. When the dough is smooth and shiny, place into a buttered bowl; dust lightly with flour, cover with a kitchen towel and place in a warm draft-free place for about 45 minutes until doubled in volume;<br />
punch down the dough firmly with your fist and flatten it out in the bowl; add the candied lemon peel, raisins and currants and knead until well distributed but without working the dough more than necessary;<br />
line a large bread pan with brown paper that has been well buttered on both sides; place the dough in the pan and trace a cross on top;<br />
cover with buttered paper and let rise again in a warm place for 15 minutes;<br />
remove the paper from the top; brush the top with softened butter.<br />
Baking</p>
<p>Preheat the oven to 200°C (400° F);<br />
place the bread pan on the middle rack of the oven and bake for 10 minutes;<br />
reduce the oven temperature to 160° C (350° F) and continue baking for another 30 to 40 minutes, brushing again with melted butter; the bread is done when the surface is golden and crispy;<br />
remove from the oven; remove the paper and let cool for 15 minutes before unmolding</p>

<p>Dalam rangka ultah KBB ini juga hyuuuk mari kita nikmati Date Scones yang aku sajikan dengan krim + peanut butter daaaaan&#8230;.tidak ketinggalan Teh Susu <img src='http://s0.wp.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' />  silahkan&#8230;. </p>

Scones:‬</b><br />
‪Sumber: Edmonds Cookery Book, NZ.‬</p>
<p>‪Untuk 12 potong‬</p>
<p>‪​‬‪3 cups tepung terigu‬<br />
‪6 sdt baking powder‬</p>
<p>‪¼ sdt garam‬</p>
<p>‪75g mentega‬</p>
<p>‪1 &#8211; 11/2 cup susu segar‬</p>
<p>‪ekstra susu‬</p>
<p>‪​‬‪- Ayak tepung, baking powder, dan garam ke dalam mangkuk.</p>
<p>- Masukkan mentega dan remas hingga berbulir2 seperti remah roti. </p>
<p>-Tambahkan susu dan aduk cepat menggunakan pisau sampai adonan lembut. </p>
<p>- Gilas beberapa kali. Tabur tepung sedikit ke atas baking tray.</p>
<p>- Letakkan dan tekan-tekan adonan scones di atas baking tray. Iris 12 potongan yg sama. </p>
<p>-Sisakan jarak 2cm antara satu scones dengan yang lainnya. Olesi susu segar di atas scones. </p>
<p>-Panggang dengan oven 220C selama 10 menit atau hingga matang kecoklatan.‬<br />

<p><b>Date Scones‬</b><br />
‪Tambahkan ¾ cup kurma cincang, 1 sdM gula dan ½ sdt bubuk kayu manis ke dalam tepung. Sebelum dipanggang, taburi scones dengan campuran bubuk kayu manis dan gula.‬</p>

<p>Sekali lagi KBB memberikan tantangan yang selama ini gak brani ato tepatnya belum pernah aku buat, Italian Cheesecake! Itu loh Cheesecake yang pinggiran dan dasarnya dibalut dengan adonan kacang halus.</p>
<p>Menggunakan dua jenis keju muda, Ricotta dan Mascarpone ditambah dengan orange juice serta aprikot kering juga sultana membuat rasa kue yang satu ini&#8230;hmmmmm&#8230; Nyamiiiiiii&#8230;;)</p>
<p>Untuk Ricotta aku beli jadi dan Mascarpone aku bikin yang homemade&#8230;iya betul bikin sendiri, manual <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  gampang gak ribet dan juga bagus hasilnya persis seperti yang dijual dipasaran selain lebih ekonomis pastinya&#8230;.tenaaaang ada resepnya koq dibawah :p</p>
<p>Naah&#8230;untuk dried apricot yang harganya lumayan mahil itu, aku dapet kiriman dari sesama teman KBB yang berdomisili di Gouda, Belanda, Rurie Van Sark. Mak Rurie juga kirimin aku ramekin disamping oleh2 lainnya huhuhuyyy&#8230;. Ada difoto2 dibawah tuh nanti. Sengkyu ya Mak Rurieeeee&#8230;.*hugs*</p>
<p>Wokeh&#8230;silahkan diintip deh resepnya nih:</p>
<p><strong>Resep Homemade Mascarpone</strong><br />

<p>Bahan:<br />
250gr fresh cream (cream asli yg dairy, ga boleh yg non dairy)<br />
25gr air jeruk lemon/nipis</p>
<p>Cara membuat:<br />
1. Masak freshcream smp mendidih, aduk supaya tdk hangus<br />
2. Matikan api, masukkan air jeruk lemon/nipis, aduk rata. Biarkan adonan mengental.<br />
3. Saring dengan kain (bisa kain tipis/serbet bersih), biarkan uapnya hilang<br />
4. Bungkus adonan dengan kain saringan, ikat dgn karet/tali<br />
5. Letakkan di atas saringan, biarkan airnya menetes<br />
6. Simpan di kulkas semalaman. Air akan terpisah, ambil bagian padatnya, itulah mascarpone cheese.</p>
<p><strong>Lemon Cheesecake</strong> ,<br />

Cheesecake ala Italian ini memiliki rasa citrusy yang enak sekali disantap dengan espresso kental.</p>
<p><strong>Bahan-bahan :</strong><br />
<em>Untuk 8-10 porsi</em></p>
<p>¼ cup port &#8212;&#8211; (*sejenis wine &#8211; bisa diganti)</p>
<p>¼ cup orange juice</p>
<p>75g sultanas</p>
<p>150g mascarpone</p>
<p>400g ricotta</p>
<p>125g gula kastor</p>
<p>2 btr telur, pisahkan kuning dan putihnya</p>
<p>3 buah lemon, parut kulitnya</p>
<p>60g tepung terigu</p>
<p>80g manisan apricot, iris tipis</p>
<p><strong>Crust:</strong></p>
<p>30g mentega tawar</p>
<p>185g kacang2an, haluskan</p>
<p>8 sdt gula kastor</p>
<p>4 sdt dark brown sugar</p>
<p>½ sdt bubuk kayu manis</p>
<p>¼ sdt bubuk mixed spice</p>
<p><strong>Cara Buat:</strong></p>
<p>Panaskan oven 170C. Siapkan loyang ukuran 23cm, olesi dasar dan sisi2 loyang dengan mentega leleh. Alasi dasar loyang dengan baking paper, lalu olesi mentega leleh.</p>
<p>Panasi port, orange juice, dan sultanas di dalam panci selama 5 menit. Angkat dari api, tutup dan biarkan selama 15 menit.</p>
<p>Crust: panaskan mentega hingga leleh, masukkan kacang2an, semua gula dan rempah-rempah; aduk rata. Letakkan di dasar dan sisi loyang, tekan-tekan supaya padat dan melekat.</p>
<p>Kocok mascarpone dan ricotta hingga lembut, lalu masukkan gula, kuning telur dan parutan kulit jeruk, lalu masukkan tepung, aduk hingga rata dan lembut. Masukkan campuran sultanas-port-orange juice dan apricots.</p>
<p>Kocok putih telur di dalam mangkuk yang bersih dan bebas lemak hingga soft peaks. Masukkan putih telur kocok ke dalam campuran keju. Tuang ke dalam loyang, ratakan permukaannya.</p>
<p>Letakkan loyang ke atas loyang oven/loyang biscuit (oven tray/baking tray), panggang selama 1 jam, atau hingga permukaan cheesecake set tengah2nya dan berwarna emas kecoklatan di sekelilingnya. Matikan oven. Biarkan cheesecake di dalam oven dengan pintu dibuka sedikit selama 50-60 menit.<br />
Keluarkan cheesecake dari oven. Gunakan pisau tumpul secara perlahan ke sekeliling cheesecake, lalu biarkan hingga betul2 dingin. Keluarkan cheesecake dari loyang dan dinginkan dalam kulkas selama 2 jam sebelum disajikan.</p>
<p>Tips: olesi mentega leleh ke sekeliling loyang agak tebal sehingga crust kacang akan terbalut secara merata.</p>

1/2 cup minyak sayur<br />
2 sdt vanilla<br />
1 cup semisweet choco-chip<br />
2 sdm gula pasir untuk taburan</p>
<p>loyang muffin isi 12, lapisi dengan paper cup<br />
set oven dengan suhu 375 F (190 C)</p>
<p><b>Directions:</b><br />
1. Campur terigu, bubuk coklat, baking powder dan garam ke dalam wadah berukuran sedang, aduk rata, sisihkan.</p>
<p>2. Dalam wadah yang lebih besar, campurkan telur, susu, vanilla, minyak sayur dan gula pasir, kocok menggunakan kocokan kawat saja.</p>
<p>3. Masukkan campuran tepung ke dalamnya, aduk rata (jangan overmix). Masukkan choco-chip, aduk sebentar saja.</p>
<p>4. Tuangkan ke dalam cetakan muffin yang sudah dilapisi paper cup. Taburi permukaannya dengan gula pasir.</p>
<p>5. Panggang dalam oven selama kurang lebih 22 menit, hingga mengembang, dan kalo ditusuk pake lidi di bagian tengah, nggak ada lagi adonan yang menempel.</p>
<p>6. Diamkan di dalam cetakan selama 5 menit, baru diangkat dan dinginkan di atas rak.</p>

<p><b>Ingredients</b><br />
1 3/4 cup flour,<br />
3/4 cup (or less) sugar,<br />
1 tsp BP,<br />
1 tsp BS,<br />
1/2 tsp salt,<br />
1 egg,<br />
1/2 cup vegetable oil,<br />
1/2 cup plain yoghurt, <em>(me, buttermilk)</em><br />
1 tsp vanilla extract,<br />
1 cup mashed ripe banana,<br />
3/4 cup choco-chip</p>
<p><b>How To:</b><br />
In large bowl, combine: flour, sugar, BP, BS and salt. </p>
<p>In another bowl, combine: egg, oil, yogurt and vanilla. Stir into dry ingredients until just moistened. </p>
<p>Fold in banana and choco- chips. Fill muffin cup 2/3 full. </p>
<p>Bake 180 C for 22-25 minutes.</p>

Just try the recipe and prove me wrong :p</p>
<p><b>Ingredients:</b><br />
- 2 cup tepung terigu all purpose<br />
- 1 cup gula pasir<br />
- 2 sdt baking powder<br />
- 1/2 cup (1 stick) mentega, lelehkan<br />
- 3/4 cup susu cair<br />
- 2 butir telur (large)<br />
- 2 sdt parutan kulit lemon<br />
- 1/4 cup air jeruk lemon segar<br />
- 1/2 cup (atau lebih) semisweet choco chips ( I used lemon flavor cooking chocolate, chopped)</p>
<p><b>Sprinkle:</b><br />
- 1/4 cup gula pasir (atau kurang)</p>
<p><b>Directions:</b><br />
 <em>Siapkan loyang muffin isi 12, lapisi dengan paper cup. Set oven dengan suhu 375o F</em></p>
<p>1. Campurkan terigu, gula dan baking powder dalam wadah berukuran sedang, aduk rata, sisihkan.</p>
<p>2. Kocok (cukup dengan kocokan kawat) telur, mentega cair, susu, air jeruk lemon serta parutan kulit jeruk. </p>
<p>3. Setelah rata, masukkan adonan tepung, aduk sampai rata (jangan overmix)</p>
<p>4. Masukkan choco chip, aduk secukupnya.</p>
<p>5. Tuang ke dalam cetakan muffin (paling bagus menggunakan sendok es krim atau sendopk khusus cookies).</p>
<p>6. Taburi permukaan muffin dengan gula pasir.</p>
<p>7. Panggang dalam oven selama 22-24 menit atau sampai matang. </p>
<p>8. Biarkan selama 5 menit dalam loyang, setelah itu, angkat dan dinginkan di rak.</p>
<p>Note:<br />
saya menggunakan choco-chip lebih banyak daripada yang diminta resep, tapi untuk taburan gulanya saya kurangi.</p>

<p><b>Banana Crumb Muffins</b></p>
<p><b>INGREDIENTS</b></p>
<p>1 1/2 cups all-purpose flour</p>
<p>1 teaspoon baking soda</p>
<p>1 teaspoon baking powder</p>
<p>1/2 teaspoon salt</p>
<p>3 bananas, mashed</p>
<p>3/4 cup white sugar</p>
<p>1 egg, lightly beaten</p>
<p>1/3 cup butter, melted</p>
<p>1/3 cup packed brown sugar</p>
<p>2 tablespoons all-purpose flour</p>
<p>1/8 teaspoon ground cinnamon</p>
<p>1 tablespoon butter</p>
<p><b>DIRECTIONS</b></p>
<p>Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers. </p>
<p>In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. </p>
<p>In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. </p>
<p>Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.</p>

<p><b>Notes:</b></p>
<p>* sering kita agak &#8216;ribet&#8217; ya buat melumatkan pisang, nah masukkan dari mb Elsye, sudah saya buktikan dan berhasil sukses; coba taruh pisang dalam wadah yg tahan panas tutup dg penutup (saya asal ketutup aja) lalu masukkan microwave kira2 2-3 menit. Sebaiknya coba dulu 2 menit. Dijamin pisang lebih mudah utk dilumatkan hanya dengan bantuan garpu.</p>
<p>* JANGAN terlalu lama mengaduk adonan muffin, karna pada intinya adonan muffin &#8216;hanya&#8217; asal tertcampur rata, cukup aduk perlahan.</p>
<p>* Panaskan oven sebelum kita membuat adonan, sehingga pada saat adonan muffin akan dipanggang panas oven sudah tinggi</p>
<p>* Muffin masih bersisa tapi kita sudah kenyang? Tenaang&#8230;taruh muffin kedalam wadah bersih, tutup dan simpan di lemari pendingin. Besok atau lusa pagi, bisa dikeluarkan dan panaskan dalam microwave (bukan oven) kira2 selama 1 menit. Muffin akan kembali seperti semula, bahkan lebih enak <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>* Memanaskan muffin memang sebaiknya tidak di oven, karna suhu panas oven beda dengan microwave, oven akan membuat muffin lebih kering/keras saat dipanaskan. Sedangkan microwave hasilnya akan moist. hal ini juga bisa dipraktekkan buat Zouppa soup.

			<content:encoded><![CDATA[<p>Kue Ceplok Telor? Hihi&#8230;bukaaan bukan telor ceplok beneran koq, disebut begitu karna topping dari cake ini peach kaleng yg bentuknya pan mirip telor tuh, seperti foto dibawah (milik dari mb Retno &#8216;kedai hamburg).</p>
<p>Naah&#8230;karna penasaran sama kue buatan Mbak Retno ini makanya pas ada sisa peach trus bahan2 lainnya masih punya langsung deh bikin, alhasil kueku gak bulat bentuk peachnya, lha wong cuma punya 2 potong hehehe&#8230;. </p>
<p>Bahan:<br />
5 butir telur /eggs<br />
250 g butter<br />
250 g gula pasir /fine sugar<br />
250 g tepung terigu/all purpose flour<br />
1 bks backpulver/baking powder<br />
500 ml susu cair/milk<br />
1 bks Vanille puddingpulver/custard powder<br />
500 g atau 600 g schmand/sour cream<br />
2 bks Tortenguss atau agar-agar<br />
1 kaleng besar Aprikose (airnya dipisahkan 250 ml)<br />
250 ml apfelsaft/juice apple</p>
<p>Cara:<br />
Lapisan 1 (bolu):<br />
- kocok 5 butir telur dan gula pasir dengan mixer kecepatan tinggi selama kira-kira 10 menit.<br />
- Kemudian masukkan butter, kocok lagi setelah itu<br />
- tambahkan tepung terigu dan backpulver, aduk rata.<br />
- Masukkan adonan dalam loyang ukuran 28&#215;40 cm.<br />
- Panggang dalam oven suhu 200°C selama lebih kurang 15-20 menit. Sementara bolu di panggang buat lapisan 2 (putih).</p>
<p>Lapisan 2 (putih):<br />
- 1 bungkus vanille puddingpulver campur dengan 2 sdm gula pasir,<br />
- kemudian masukkan susu sedikit demi sedikit sampai tercampur rata. &#8211; Masak sampai kental dan mendidih.<br />
- Angkat, campur dengan schmand/sour cream sambil di aduk rata.<br />
- Siram adonan ini di atas permukaan bolu (lapisan 1), &#8211; kemudian panggang lagi dalam oven sekitar 15 menit.<br />
- Tunggu sampai kue dingin, baru tata buah Aprikose diatas lapisan putih.</p>
<p>Lapisan 3 (bening):<br />
- campur Tortenguss atau bisa diganti agar-agar dengan sisa air Aprikose (250 ml) dan 250 ml apfelsaft/juice Apple.<br />
- Masak sampai kental dan mendidih. Siram di atas buah aprikose.</p>
